The project “Incubator of Innovation 2.0” contributed to the financing of 9 selected R&D works. Today we present a product that was developed under the supervision of Dr. Piotr Kulawik, Prof. UR, as part of the pre-implementation work entitled “Hydrolysate of gelatine from carp in the form of microcapsules for extending the shelf life of fish and fish products ”.
According to the FAO Save Food Initiative, about 1.3 billion tonnes of food produced are wasted annually. This is about one-third of the total volume of food produced. The percentage of wasted food is the highest in the countries of Europe and North America, where in the European Union alone these losses per capita amount to about 170 kg per year.
The technology developed within the project is an active biopolymer coating containing microcapsules of gelatin hydrolyzate from carp skin and bioactive Ala-Tyr peptide. After production and drying, the product looks and behaves like an ordinary foil, which in turn can be used to wrap a food product therein or as one of the active packaging layers.
The obtained “foil” is made of natural raw materials, fully biodegradable, using in its composition, inter alia, waste materials from the fish industry. In addition, it shows active properties – that is, it extends the durability of the products wrapped in them.

The aim of the project “Incubator of Innovation 2.0” is to support the process of managing the results of scientific research and development works, in particular with regard to their commercialization. The implementation of the program should contribute to the promotion of scientific achievements, increasing their impact on the development of innovation and strengthening cooperation between the scientific community and the economic environment.
The project called “Incubator of Innovation 2.0” is carried out as part of an out-of-competition project “Support for the management of scientific research and commercialization of R&D results in research units and enterprises” under the Intelligent Development Operational Program 2014-2020 (Measure 4.4). The total value of the Project is PLN 1,210,000.
